The new University wine is here
03/03/2026A Silvaner full of character in an elegant Bocksbeutel bottle: the new UniWein is here. It was once again produced by the Staatlicher Hofkeller Würzburg in cooperation with the university.
Harvested in the top vineyards of the Staatlicher Hofkeller Würzburg. A Silvaner characterised by aromas of local stone fruit. Bottled in the typical Franconian Bocksbeutel, which are perfect as collector's items. This is how Thilo Heuft, head of the Hofkeller, described the 2025 UniWein.
The wine has now been presented in the foyer of the university on Sanderring. "With the UniWein 2024, we have established a new tradition together with the Staatlicher Hofkeller: an annual, limited collector's edition that is much more than just a good glass of Franconian Silvaner," said University President Paul Pauli.
Each edition of the UniWein features an important building of Julius-Maximilians-Universität Würzburg on the label. This time it is the turn of the university building on Wittelsbacherplatz, built in 1898; the première the year before featured the Old University and the Neubaukirche.
University had its own vineyards
The UniWein symbolises a connection that is deeply rooted in Würzburg - the connection between science, the city and wine culture. "The university used to have its own vineyards and partially paid its professors with wine," said President Pauli.
The historical background:
In order to provide financial security for his university, Prince-Bishop Julius Echter von Mespelbrunn also endowed the university with land from 1582. In addition to meadows, fields and forests, this also included vineyards.
In 1814, the Bavarian state took over the Würzburg area and quickly stripped the university of its sovereign rights. In 1821, the university's highly fragmented land and property holdings were cleared up through a comprehensive exchange with the state. In the process, the university lost all its vineyards.
